Sally’s Own Pizza Recipe

Ingredients:

2 cups Creeds spelt flour (can use any flour or a mixture)
1½ teaspoons dried yeast – or use 20g wet yeast
1 teaspoon baking powder 
1½ teaspoons extra virgin olive oil
1 teaspoon Creeds Organic honey
2/3 cup warm water
Sometimes I pop an egg in too – depends on my mood.

Directions:

- Stir first 3 ingredients together
- Add remaining ingredients and stir well using your hands
- Knead until smooth
- Stretch or roll to fit a large pizza pan or flat oven pan
- Now put aside to rise for around ½ to ¾ hour.
- Place in a very hot oven near the top and watch it so it doesn’t burn
- Bake for around 5 minutes – but it may be more or less according to your oven
- Now place tomato puree/paste on the base, plus all your other wonderfully healthy ingredients, sprinkle with organic cheese, and back in the oven for 8-10 minutes.  

Should feed around 6 if your pan is large enough. 

Toppings I love: (sometimes I use them all, sometimes just a few)

- Sautee’d mushrooms
- Base is spread with thick tomato paste (organic)
- Then, place on top of this thinly sliced fresh tomatoes over tomato paste
- Then it’s a hotchpotch of olives, pineapple, chopped basil leaves, masses of finely chopped garlic, either fresh or caramalised or sautéed onions (loads), peppadews, sometimes bell peppers with the skins taken off in the oven.
- Over this we sprinkle some mozzarella (organic), and maybe a little feta or goats cheese so there’s not too much cheese.  
- Then we sprinkle liberally with cayenne pepper and maybe some chilli flakes

Once cooked (about 8-12 minutes in the oven – can be around 200-220 degrees C) – I then mush up avocado and spread that over the top and eat it with a huge crunchy salad!  

Prepare to experience what food would be like in heaven….
